Method
 

  1. Prepare the Crust: In a food processor, pulse flour, cocoa, icing sugar, and salt. Add cold butter and pulse until the mixture resembles coarse breadcrumbs. Add the egg yolk and pulse until the dough just begins to clump together.
  2. Form and Chill: Press the dough evenly into a 23cm tart tin with a removable bottom. Prick the base with a fork and freeze for 20 minutes.
  3. Bake: Preheat oven to 180°C. Line the crust with baking paper and pie weights or dried beans. Bake for 12 minutes, remove weights, and bake for another 3 to 5 minutes until set. Let cool completely.

  5. Emulsify: Gently stir the chocolate and cream starting from the centre until smooth. Stir in the softened butter and vanilla until glossy.
  6. Set: Pour the ganache into the cooled tart shell. Let it sit at room temperature for 30 minutes, then sprinkle generously with flaky sea salt.

  • Preventing a Soggy Base: Ensure your tart shell is completely cool before pouring in the warm ganache. If the shell is still hot, the moisture can soften the pastry, losing that signature biscuit snap.
  • Storage: This tart keeps well in the fridge for up to 3 days. However, the salt crystals may eventually dissolve into the chocolate due to moisture. If you are making this ahead of time, hold off on the salt garnish until just before you serve it.
  • Cream Consistency: Use standard heavy cream or pouring cream. Avoid “thickened” creams that contain gelatine, as they can alter the smooth, melting texture of the ganache.
